Indian ginger is prized for pungency rather than fibre, and Cochin-type rhizome carries the volatile oil profile most beverage and bakery formulators are benchmarking against. We source from Kerala, coastal Karnataka and the North-East, dry under controlled conditions to protect gingerol, and mill to 60 or 80 mesh. Fibre content and volatile oil are the two numbers that decide the account — both are declared on every offer.
